was had by all seeing 35 of our beers crammed onto the board was a beautiful thing to see even if not the most reader friendly another thanks to all of you who have made the last two years so great so now that we re another year older and presumably wiser what s next well you can count on the same philosophy that has gotten us to this point fresh ingredients good eats solid brews and maybe something wacky every now and then for me personally year 3 brings a handful of fun but especially challenging projects of course there is project gemini which you probably already know about my head brewer jason davis and i will be in houston on wednesday december 8 to hang out and get a better feel for that city jennifer litz of texas girl pint out one of the driving forces behind the freetailhouston campaign is organizing a place where we can all get together drink some brews and answer questions so keep an eye on either of those blogs one of the toughest things about project gemini is the inevitable disappointment when we eventually pick the site of our next location we re looking at houston new braunfels san antonio and san marcos but will only choose one people in each of those cities in addition to some friends of ours in branson missouri who have their own freetailbranson grass roots campaign going have expressed tons of excitement and support so it will be a tough decision in the end they ll all be a great home for a brewpub and i hope there is someone behind us to move in if we don t another big initiative of mine goes beyond freetail and i believe it is one that can forever change the beer landscape in texas i am in the process of working with our state legislature to introduce a bill that would allow brewpubs to sell to wholesalers so that the wholesalers could sell to retailers so that the retailers can sell to you while it seems like a no brainer that texas small businesses should have the same market access as non texas small businesses an out of state brewpub can sell to texas wholesalers but a texas brewpub can t this is still a highly contentious issue recent comments by members of the wholesale tier indicate a long uphill battle to affect legislative change that would help texas businesses and give texas consumers access to a wider range of products but i m a believe in justice and i think it s just a matter of time before texas laws are changed to put texans first for the record i believe in the 3 tier system but i don t believe in a system where one party exists because of and benefits from a legislative mandate i believe wholesalers are invaluable to the beer industry i m a beer maker not a beer warehousers and deliverer i m not interested in owning trucks or keeping tabs on thousands of accounts and i doubt i d be good at it wholesalers on the other hand are usually really good at it but when positive changes that would help businesses and give customers more choice are the victim of protectionism the economist in me gets a little ticked i don t buy the argument that we are one step away from tied houses if we allow texas breweries to grow even if we were my reaction would be bring it on coincidently this is the same reaction i have to a large national beer bar chain buying a billboard in my parking lot i can go on forever about this topic look for a plethora of posts on it coming than any other holiday for me it carries extra significance because it represents the end of the freetail year on black friday we are honored to welcome weary shoppers and well rested folks who stayed away from the madness into our pub for a weekend long anniversary celebration tomorrow the brewpub that i ve devoted five years of my life to officially turns two two years ago head brewer jason davis chef gary butler and our draft technician from drafttex out of new braunfels joined me at the brewpub for a take out meal from a generic chain italian restaurant as we tried frantically to finish all we could to prepare for the next day s opening we ate that meal on a ply wood bar top as ours wouldn t be installed until 30 minutes before we opened and i have to admit there was a certain sense of holy shit i don t know if we can pull this off tomorrow in the air even in the middle of all the chaos i never doubted whether we would succeed in what we were trying to accomplish as jason and gary will attest to i have lofty standards the kind that drive folks like jason and gary mad at times but the vision i had on new year s eve 2005 when i resolved to open the second brewpub in san antonio never seemed out of reach note there we re plenty of times in our first few months of operation when that holy shit feeling returned but it always passed two years later having already collected a handful of awards and recognition neck deep evaluating our next location while trying to initiate legislation that would change the texas beer landscape forever no longer fretting about the ability to make payroll the best feeling is still that moment when we convert someone into a craft beer drinker all across the us but especially in texas craft beer is poised to revolutionize the way we all think about beer and i m thankful to have had the opportunity to be part of that i m thankful for all the amazing friendships i ve made at the brewery to the coworkers industry peers and the customers who have become friends you are all truly amazing and i couldn t have do it without you thanks for the wonderful two years i can t wait to write next year s thanksgiving post november 25 2010 categories uncategorized 1 comment big cities have brewpubs as most of you know i m currently knee deep in evaluating expansion products for our brewery houston new braunfels san antonio and san marcos are the cities we have publicly stated we are interested in those who know me are well aware that i will gladly go graph for graph with the nerdiest of nerds to prove i m as dorky as they come i m an economist and stats geek and i m proud of it one of the curious stats i thought of while do some market research in an extension of a conversation i had years ago with my friend erin glass membership coordinator and brewery detective of the brewers association when i was in the process of starting freetail i was chatting with erin about some statistics and she was surprised to find out san antonio was a metropolitan area of approximately two million people and she was appalled that it only had one brewpub a city that big should have 10 brewpubs she exclaimed so years later here i am wondering where to put numero dos and erin s point came back to mind big cities should have brewpubs ex girlfriends can attest that once i get curious about something i don t stop until i have the answer so i just spent the last hour compiling the data for this chart apologies for the fuzziness i m an economist not a photoshop power user source 2009 us census bureau population estimates beermapping com city maps bpm brewpubs per million people a couple of acknowledged problems with my source data because i used beermapping com maps to source the number of brewpubs in a geographic area there are a couple of issues by the way beermapping is an amazing travel resource and i use it every time i travel some breweries may have closed since the last update of these maps for example the covey in forth worth and two rows in houston i didn t alter any data even if i knew the places were closed because i m too lazy and that would result in lessened overall accuracy some breweries are counted in multiple metropolitan areas beermapping maps extend to multiple metro areas beermapping bases their maps on well i don t know what exactly because we are dividing by msa population that doesn t match the beermapping geographic area sometimes breweries are double counted for example all of san jose shows up in the san francisco area map other examples are that the louisville map includes columbus and cincinnati and the denver map includes boulder but those are not the same census metro area some cities don t have pre made beermapping maps in these cases i used the map that comes up when you type in a location which incorporates a 25 mile radius this contributes to part of problem 2 there may exist an arbitrary distinction between breweries and brewpubs i used whatever beermapping lists as a brewpub for the most part i think things are listed pretty accurately bj s that don t brew in that location for example don t come up as brewpubs stone brewing in san marcos ca comes up as a brewpub since they have a restaurant but great divide in denver which has a tasting room bar comes up as a brewery despite the problems inherent in my calculations i think this the metrics are pretty good i found especially curious that austin the beer mecca of texas still ranks very low in the bpm ranking residents of houston you already knew you d come in last especially now that the numerator has fallen to zero i don t have any normative statements to add to this analysis the data speaks for itself november 15 2010 categories uncategorized 4 comments why i do it it didn t take long after freetail was open serving beer and attracting customers for strangers to start approaching me asking if i needed investors or if i would franchise out the concept to be clear i would never ever license to a franchisee for starters as anyone who knows me will tell you i am way too much of a control freak to allow that to happen and second that isn t how i roll my response is always the same why would you want to be invested in something like this the answer usually it seems like a good money maker and that is the summation of why i wouldn t go into business with that individual seem counterintuitive certainly an economics professor and businessman such as myself understands that businesses exist to generate a profit right i ve been teaching undergraduate economics for six years explaining that very concept to students so why wouldn t that alone be the basis for choosing business partners i ve met a lot of people who want to start breweries some of them more likely and or viable but not necessarily both likely and viable than others i ve given a talk i wrote dollars and sense formulating and funding your brewpub and national conferences in addition to local seminars it seems everyone wants to start a brewery especially if you live in austin i can t blame them this is the best job in the world but not everyone has the same motives one of the roles i like to play to the would be brewers i meet is that of financial advisor i tell them they d be better off opening a bunch of subway franchises than a brewery i make it very clear even to people who i m trying to raise funds from breweries and brewpubs are not grade a investments the capital requirements are significantly more intense the returns are signficantly lower the risk factors are astronomically higher there is a reason you don t see donald trump brewing co right off central park west so why do i do it why does anyone do it here s why because no other job i ve had allows me to conduct experiments like ceres ceres is a used whisky barrel we purchased through a friend from the four roses distillery in kentucky we were excited when ceres arrived and we immediately filled her up with a brew most of you know la muerta in a few months we would have barrel aged la muerta and my email box and twitter began to light up with messages from excited craft beer fans i was excited too barrel aged imperial stouts are one of those styles that stand up and shout i am beer i am glorious i am special as the story turns out something happened inside ceres and except for what was immediately released on draught and a few bottles an infection took over and we had a bunch of lactic sour la muerta the whisky character was gone and all that was left was this sticky slightly acidic roasty beer that as those who saw my face when we cracked one open at the most recent dia de la muerta bottleshare can attest to was not enjoyable fail but the story of ceres was not a complete disaster while we didn t anticipate what happened with barrel aged la muerta we expected to have a sour barrel on our hands at the second fill in went our olde ale old bat rastard what came out barrel aged obr is one of the beers i m most proud of a slightly acidic slightly brett olde ale that was not only delicious but i felt very accurately represented the style ceres produced a hit ceres went on to then become the vessel for our solera series in which we filled the barrel and then pulled portions out from time to time refilling it with ...
