jenny mondays soul survival hosted by donna i ve been reading some japanese blogging friends talking about cooking and using bamboo shoots so i thought i would like to share a recipe using bamboo shoots this is the kind i can get at the asian market it has a very interesting interior japanese artistic cooks slice it in ornamental ways recipe bamboo vegetable soup 1 large cone bamboo sliced and chopped or 1 can bamboo shoots 1 cup 250cc celery chopped 1 2 yam or sweet potato chopped 4 cloves garlic minced 2 5cm ginger root minced 1 turmeric tuber minced and or 2 tbsp 30cc turmeric powder 1taro root peeled and chopped 1 cluster oyster mushrooms 2 cups 500cc broccoli or kale flower bud heads chopped 1 cup 250cc chinese pea pods optional water for cooking level lemon pepper to taste instructions boil water add turmeric powder add rest of ingredients simmer to desired degree of doneness season with lemon pepper to taste serve with chicken poached eggs or other protein source part of the ingredients the taro root is the small fuzzy kind r of the ginger root served with poached eggs served with pea pods the taro root along with conjac root purple yam brown on the outside purple streaks in the flesh and 4 other japanese root vegetables contain hyaluronic acid which is the basis for collagen and causes the people in the small japanese town of yuzurihara to live to very old donna i am sharing my favorite side dish i make when i am roasting chicken or lamb eggplant i also roast sweet potatoes or cut cleaned squash halves and white potatoes at the same time recipe roasted eggplant side dish 2 large eggplants or 6 long asian eggplants slice put in 2 large baking dishes top with 1 2 chopped onion or 2 shallots optional 6 oz 170 gm butter or coconut oil or olive oil roast at temperature of meat from 325 400ºf 163 204ºc flip when bottom of eggplant pieces is getting brown then several more times to brown evenly remove when browned to taste sprinkle on lemon pepper top with onion garlic or herb tomato sauce optional sprinkle with parmesan cheese optional or top with sour cream optional with spaghetti sauce and parmesan cheese plain with sour cream this dish is very savoury i sprinkle the eggplant on vegetable dishes rice or rice noodles for flavor or serve plain with sour cream a vegetarian can use roasted eggplant as a substitute for meat to give dishes a meaty various protein foods like beans eggs fish beef lamb or poultry depending on what diet you are on you can also serve it with a side of rice quinoa or buckwheat if desired the individual vegetables can also be whatever you have on hand and the ginger and turmeric can be powdered if fresh roots are not available other mushrooms can be substituted as well so the recipe can be altered according to what you have the sweet potato can also have as substitutes a darker sweeter yam or even the purple yam or taro root available in asian markets that are high in hyaluronic acid i generally pressure cook the soup but cooking in a regular pot will work i like the pressure cooker since it only takes 3 minutes to cook and tenderizes things basic ingredients 2 3 turmeric root chopped finely or 2 3 tbsp
